The Challenge

Saffron & Sage wanted to reinvent regional Indian cuisine for a younger, design-conscious crowd in Pune. The 4,500 sq ft site was a long, narrow shell with limited natural light, and the owners needed a layout that could handle busy weekend dinners, relaxed weekday lunches and private celebrations. With leases and marketing already committed, the bistro had to be ready for opening night in just 9 weeks.
